What in your humble opinion are the two best races for paladin and what stats should I look for in each, a little detail on why the races you pick are best would be most appreciated. Thanks in advance.

Well there is only two races for paladin, and as much of a fan I was of Human Paladins, Halflings are better.
As for what you need to look for should be able to be deducted from typing "help maxstats" in the NM client, but for now here are the max stats.

Human:19 19 19 19 19 19
~
Halfling:18 19 21 18 18 19

As for what stats in particular matter to the Paladin, all of them but Int. As Int is something for Mages only.

Str: Determins how hard you hit, as it does with all attacking classes.

Int:No purpose but in mages.
`
Dex: How often you hit/are hit.
`
Con:Health you start with and your gains.
`
Wis:Mana you start with and your gains as well as how much magic hurts you.

Char:How much you heal for and how much you get healed.

When rolling a paladin, if your lucky enough to get max in each of those, then take it, or if you have the gold, buy it. However its just best to make sure your Dex,Con,Wis need to be max, and Str and Char should be pretty darn close to it.
