I didn't join a PvP server yet. I started a character on Burning Blade server hoping to meet up with the people from Wowra, but ended up queued... I'm impatient so I went back to Shadowsong
I would, however, protest against the 'lameness' of PvE servers... I don't play PvE because I dislike PvP. I play PvE because I became sick of the attitude on the PvP servers.
In beta I got my NE rogue to lv27 on the PvP server... and had to solo almost the entire way. People were so busy becoming powerful themselves that in general they seemed to have very little time for other people...
Oh yeah, a lot of them laughed at me and were generally quite insulting because I was roleplaying too. What joy that was.
It was a lonely was to play.
On the PvE servers people are generally more helpful and a little more open minded.
(That said, despite this I did plan on going PvP, but the guild I'm in was split down the middle... and in the end they refused to join a PvP server ^^; )
Sure you
can get to 20 without entering contested territory but where's the fun in that?
If you're a Nightelf... surely you ended up in Darkshore. You normally end up there long long before you're level 20, and while that place may be Alliance territory it doesnt mean that there arent plenty of raids and straggling Horde invaders appearing up there

And yes, a number of the EU realms share the names of US realms (ones noticable to me were Argent Dawn and Earthen Ring the RP servers... but there are others that share names)
Sadly they aren't the same ones, and Blizzard still only has an "at some point after launch" as their timeframe for allowing access to US servers.
